  1. Soak the urad dal for 2-3 hours, then grind with minimal water into a thick, fluffy batter similar to medu vada batter.
  2. Fold in rice flour, chopped coconut pieces, green chillies, ginger, curry leaves, coriander leaves, crushed black peppercorns, asafoetida and salt; mix well.
  3. Heat coconut oil in a kadhai. Wet your hands, scoop small portions of the batter and drop them directly into the hot oil to shape round bondas.
  4. Deep-fry on medium flame, turning occasionally, until golden brown and crisp outside and soft inside.
  5. Drain on paper towels and serve hot with coconut chutney, a South Karnataka darshini favourite.
