
Kaalan Bonda
Mushroom-stuffed gram flour bonda deep-fried till golden. Popular evening snack from Chennai tea stalls.

Ingredients
Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Red Chilli Powder (Lal Mirch) — 2.5 g (ground)
- button mushrooms — 120 g (chopped)
- salt (optional) (whole)
- Gram Flour — 1 cup (ground)
- Turmeric Powder — 1 g (ground)
Tempering
- Coconut Oil — 2 tbsp (whole)
Method
- Clean and finely chop the mushrooms. Saute briefly in a little oil with turmeric and red chilli powder until they release and reabsorb their moisture. Cool.
- Make a thick batter with gram flour, a pinch of turmeric and chilli powder, salt and water.
- Shape the cooked mushroom mixture into small balls and dip each one in the gram-flour batter.
- Heat coconut oil in a deep kadhai on medium flame. Fry the coated balls in batches until golden brown and crisp.
- Drain on paper towels, garnish with coriander leaves, and serve hot with coconut or tomato chutney.
