A traditional Andhra Pradesh vegetarian solid dish. Golden crispy batter balls made from leftover idli-dosa batter, deep-fried.

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Dosa Batter (Classic) — 100 g (whole)
- Gram Flour — 30 g (ground)
- salt (optional) (whole)
- Kanchipuram Idli Batter — 100 g (whole)
- green chillies — 8 g (chopped)
- Rice Flour — 40 g (ground)
Tempering
- Coconut Oil — 2 tbsp (whole)
Method
- Prepare the filling/mixture for Punugulu. Chop or mash ingredients as needed.
- Mix with spices, salt, and binding agent (besan/flour). Shape into desired form.
- Heat oil in a deep kadhai on medium flame.
- Fry in batches until golden brown and crispy. Drain on paper towels.
- Serve hot with chutney.
