
Sikkim Pork Fried Rice

Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- salt (optional) (whole)
- rice — 250 g (ground)
- green peas — 30 g
- Carrot — 40 g
- Pork Belly — 100 g (chopped)
Tempering
- oil — 2 tbsp (whole)
- Cumin Seeds — 1 tsp (whole)
Method
- Cook rice ahead of time and cool completely (day-old rice works best for frying). Dice pork belly into small bite-size pieces; finely chop carrot.
- Heat oil in a wok or heavy pan on high flame. Add cumin seeds, let them sizzle a few seconds.
- Add pork pieces and stir-fry 5-6 minutes until browned and cooked through. Add carrot and green peas, stir-fry 2 more minutes.
- Add the cooled rice, breaking up clumps. Toss well on high flame for 4-5 minutes until heated through and slightly crisp at the edges.
- Adjust salt. Garnish with fresh coriander leaves. Serve hot.
