
Arunachal Pork Fried Rice

- rice — 250 g (ground)
- Nagaland Smoked Pork (Traditional Fire-Dried) — 250 g (chopped)
Tempering
- oil — 2 tbsp (whole)
- Cumin Seeds — 1 tsp (whole)
Method
- Use cold, pre-cooked rice. Cut the smoked pork into small pieces.
- Heat oil in a kadhai on high flame, add cumin seeds, then stir-fry the smoked pork until crisp at the edges.
- Add chopped king chilli and toss briefly (adjust to taste for heat).
- Add the cold rice and salt, and stir-fry on high heat until the grains are hot and separate.
- Garnish with coriander leaves and serve hot.
