
Sasaram Bihari Kabab

- Mint Leaves (optional) (garnish) — 8 g (chopped)
- Coriander Leaves (optional) (garnish) — 10 tbsp (chopped)
Main
- Red Chilli Powder (Lal Mirch) — 3 g (ground)
- Garlic — 15 g (chopped)
- onion — 80 g (chopped)
- coriander powder — 2 g (ground)
- Gram Flour — 30 g (ground)
- green chillies — 8 g (chopped)
- Ginger — 15 g (chopped)
- salt (optional) (whole)
- Mutton — 500 g (chopped)
- garam masala powder — 3 g (ground)
- Turmeric Powder — 1 g (ground)
Tempering
- Mustard Oil — 20 tbsp (whole)
Method
- In a bowl, combine minced mutton with roasted gram flour, chopped onion, ginger, garlic, green chilli, garam masala, red chilli powder, coriander powder, turmeric, mint and coriander leaves, and salt.
- Knead the mixture well into a smooth, bindable dough. Rest for 20 minutes.
- Divide into portions and shape into small flat oval patties (tikkis).
- Heat mustard oil on a tawa/griddle over medium flame and shallow-fry the patties for 4-5 minutes per side, pressing gently, until deep golden-brown and cooked through.
- Serve hot with sliced onion, lemon wedges and green chutney, street-food style.
