
Rang Panchami Puran Poli
Chana and toor dal cooked down with jaggery into a sweet puran, wrapped in a soft wheat-flour poli and roasted on the tawa for Rang Panchami.

- Toor Dal — 100 g (whole)
- Chana Dal — 100 g (whole)
- Wheat Flour (Atta) — 1 cup (whole)
- Jaggery — 190 g (ground)
Tempering
Method
- Set a spoon of the oil to warm in a heavy pan and keep the rest aside for the tawa.
- Soak the Chana Dal and Toor Dal 30 minutes, then boil them in 450 ml water for 25 minutes until they crush between two fingers.
- Strain them through a colander and press out all the liquid.
- Grind or mash the drained dals into a fine, even puran with no whole grains left, then stir in the Jaggery.
- Cook the puran in the pan 10 minutes on low, stirring without stopping, until the jaggery melts in and a spoon stands upright in it.
- Season with salt, spread it out to cool, then roll it into equal balls.
- Knead the Wheat Flour with water and a little oil into a soft, smooth dough; rest 15 minutes.
- Roll a portion of dough into a small disc, place a puran ball in the centre, and gather the edges to seal it in completely.
- Flatten and roll the stuffed ball gently into a round poli.
- Roast each poli on a hot tawa with the remaining oil until golden on both sides; serve warm.
