Chana and toor dal cooked down with jaggery into a sweet puran, wrapped in a soft wheat-flour poli and roasted on the tawa for Rang Panchami.

  1. Set a spoon of the oil to warm in a heavy pan and keep the rest aside for the tawa.
  2. Soak the Chana Dal and Toor Dal 30 minutes, then boil them in 450 ml water for 25 minutes until they crush between two fingers.
  3. Strain them through a colander and press out all the liquid.
  4. Grind or mash the drained dals into a fine, even puran with no whole grains left, then stir in the Jaggery.
  5. Cook the puran in the pan 10 minutes on low, stirring without stopping, until the jaggery melts in and a spoon stands upright in it.
  6. Season with salt, spread it out to cool, then roll it into equal balls.
  7. Knead the Wheat Flour with water and a little oil into a soft, smooth dough; rest 15 minutes.
  8. Roll a portion of dough into a small disc, place a puran ball in the centre, and gather the edges to seal it in completely.
  9. Flatten and roll the stuffed ball gently into a round poli.
  10. Roast each poli on a hot tawa with the remaining oil until golden on both sides; serve warm.
