Bhuga Chawal

The signature Sindhi rice — basmati or sona masuri sautéed in deep-browned caramelised onions and whole spices till the rice itself takes on a nutty brown tinge. Distinctly different from pulao or jeera rice — the onions are taken to deep-brown sweetness. Served with sai bhaji or kadhi.

Method

  1. Soak 250 g basmati rice in cold water for 30 min. Drain.
  2. In a heavy pan, heat 30 g ghee + 15 g mustard oil. Add sliced onions. Sauté on MEDIUM-LOW for 15-18 minutes till deep mahogany brown — this is the signature step, do NOT rush.
  3. Add cumin seeds, bay leaf, cinnamon, cardamom, cloves, peppercorns. Bloom 30 sec.
  4. Add the drained rice. Stir-fry GENTLY for 3 minutes — rice grains coat with the brown ghee, take on amber tinge.
  5. Add 500 ml hot water and salt. Bring to boil; cover, reduce to LOWEST flame, cook 12 minutes.
  6. Switch off; rest covered 8 minutes. Fluff with a fork. Serve with sai bhaji or sindhi kadhi.
