Main
- Ragi Flour — 120 g (ground)
- Curry Leaves — 2 g
- Ginger — 5 g
- onion — 60 g
- cumin — 3 g
- green chillies — 8 g
- sooji — 50 g
- Rice Flour — 150 g
- salt (optional) (whole)
- Carrot (optional) — 50 g
Tempering
- Coconut Oil — 2 tbsp (whole)
Method
- In a large bowl take ragi flour, rice flour and rava (semolina).
- Add finely chopped onion, green chilli, ginger, cumin, curry leaves, grated carrot, coriander leaves and salt.
- Add water gradually and whisk to a thin, lump-free batter of pouring (buttermilk) consistency. Rest for 20 minutes. No fermentation needed.
- Heat a tawa. Stir the batter and pour a ladleful from the edges towards the centre to form a thin crepe with holes.
- Drizzle coconut oil around the edges. Cook on medium-high flame until the base turns crisp and golden.
- Fold and remove. Serve hot ragi dosa with chutney.
