
Puran Poli
Sweet chana dal and toor dal stuffed inside a soft whole-wheat covering, sealed and cooked on a tawa till golden -- a Western MP Holi and Gudi Padwa sweet flatbread with Maharashtrian roots.

- Chana Dal — 100 g (whole)
- Jaggery — 200 g
- Water — 300 g
- Wheat Flour (Atta) — 200 g
- Toor Dal — 100 g (whole)
Tempering
Method
- Warm a spoon of the oil and keep the rest ready for cooking the polis.
- Rinse the Chana Dal and Toor Dal and pressure-cook them with the Water for 4 whistles, until very soft.
- Drain off any excess water so the puran mixture stays dry.
- Mash the cooked dals smooth, add the Jaggery, and cook 8-10 minutes on low flame, stirring, until it thickens into a dense puran that leaves the sides of the pan.
- Cool the puran and shape it into smooth balls.
- Knead the Wheat Flour with a little water and a touch of oil into a soft, pliable dough. Rest 15 minutes.
- Flatten a portion of dough, place a puran ball inside, seal and roll gently into a stuffed disc.
- Cook each poli on a hot tawa with the remaining oil, 90 seconds a side, until golden-brown patches appear.
- Serve warm.
