
Poha Sev
Flattened rice with generous sev topping and peanuts. Ujjain morning nasta with extra namkeen.

Ingredients
Garnish
- Sev (garnish) — 30 g (whole)
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Flattened Rice — 250 g (ground)
- coriander powder — 1 tsp (ground)
- Turmeric Powder — 0.5 tsp (ground)
- salt (optional) (whole)
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
- Peanuts — 25 g (whole)
Tempering
- oil — 2 tbsp (whole)
- Cumin Seeds — 1 tsp (whole)
Method
- Rinse the flattened rice (poha) gently in a colander, drain, and sprinkle with a little water, sugar, salt and a pinch of turmeric. Fluff and set aside 10 minutes to soften.
- Heat oil in a kadhai. Add mustard seeds, cumin seeds and fennel seeds; let them splutter (fennel is essential for the Indori flavour).
- Add peanuts and fry until lightly golden, then add curry leaves and slit green chillies.
- Add chopped onion and saute until soft and translucent.
- Add turmeric powder and mix well.
- Add the softened poha and gently fold to coat evenly without breaking the flakes.
- Cover and steam on low flame for 2-3 minutes until heated through and fluffy.
- Turn off the heat and squeeze fresh lemon juice over the poha; mix lightly.
- Serve hot topped generously with sev, chopped onion and fresh coriander leaves.
