
Indori Matar Poha
Flattened rice with green peas, tempered with mustard and turmeric. Indore winter poha variation with fresh season peas.

Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
- Turmeric Powder — 1 g (ground)
- Flattened Rice — 250 g (ground)
- green peas — 250 g (chopped)
- coriander powder — 1 tsp (ground)
- salt (optional) (whole)
Tempering
- oil — 2 tbsp (whole)
- Cumin Seeds — 1 tsp (whole)
Method
- Rinse the flattened rice (poha) gently in a colander until soft, drain and set aside. Mix in salt, a little sugar and turmeric.
- Heat oil in a kadhai. Add cumin and mustard seeds and let them splutter; add fennel seeds and curry leaves.
- Add the boiled green peas and saute for a minute.
- Add coriander powder and red chilli powder, mix briefly.
- Add the soaked poha and gently fold to coat evenly with the tempering.
- Cover and steam on low flame for 2-3 minutes until heated through.
- Garnish with raw chopped onion, fresh coriander and a sprinkle of jeeravan masala. Serve hot.
