
Poha Jalebi
Indore's spiced onion-mustard tempered poha with peanuts, fennel and lemon, traditionally eaten alongside crisp sugar-syrup jalebi for the city's iconic sweet-savoury breakfast combo.

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
- Sev (optional) (garnish) — 20 g (whole)
Main
- Flattened Rice — 250 g (ground)
- Turmeric Powder — 0.5 tsp (ground)
- salt — 8 g (whole)
- Lemon — 25 g (chopped)
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
- Peanuts — 20 g (whole)
- green chillies — 12 g (chopped)
- onion — 130 g (chopped)
Tempering
- oil — 35 g (whole)
- Curry Leaves — 4 g (ground)
- Cumin Seeds — 1 tsp (whole)
- Mustard Seeds (Black) — 6 g (whole)
- Fennel Seeds — 3 g (whole)
Method
- Wash the poha briefly in a strainer and drain; do not soak, keep it just moist.
- Heat oil in a kadai. Add fennel seeds and mustard seeds; let them splutter.
- Add curry leaves, green chillies and peanuts; saute till the peanuts turn crisp.
- Add chopped onion and saute until translucent.
- Add turmeric and red chilli powder, mix, then add the drained poha and salt.
- Toss on low flame for 3-4 minutes until heated through and fluffy.
- Finish with lemon juice and coriander leaves; top with sev.
- Serve hot, traditionally alongside crisp, syrup-soaked jalebi for Indore's iconic sweet-savoury breakfast combo.
