
Pithla
Rustic Maharashtrian gram-flour (besan) curry. A tempering of oil, cumin, garlic, green chilli and curry leaves is loosened with a besan-water slurry and simmered to a smooth, creamy consistency. Bold and spicy; gluten-free. Usually eaten with jowar or bajra bhakri and raw onion.

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)

- Turmeric Powder — 0.5 tsp (ground)
- Ginger — 1 tsp (ground)

- Gram Flour — 100 g (ground)
- onion — 1 piece (chopped)
- Garlic — 1 tsp (ground)
Tempering
- Curry Leaves (optional) — 1 g (whole)
- green chillies — 15 g (chopped)
- Cumin Seeds — 1 tsp (whole)
- oil — 2 tbsp (whole)
Method
- Whisk the gram flour (besan) with about 2.5 cups of water to a smooth, lump-free slurry. Keep aside.
- Heat oil in a kadhai. Add cumin seeds, then curry leaves, chopped garlic and slit green chillies; saute until fragrant.
- Add chopped onion and saute until soft. Add turmeric and salt.
- Lower the heat and pour in the besan slurry, stirring continuously to avoid lumps.
- Simmer, stirring often, until the pithla thickens to a smooth, creamy consistency and the raw besan smell disappears.
- Garnish with fresh coriander. Serve hot with bhakri or rice and raw onion.
