
Kulith Pithla
Kulith pithla is a rustic Maharashtrian horse-gram-flour curry. Kulith (horse gram) flour is whisked into water and simmered with a garlic-onion-cumin tempering to a thick, savoury, protein-rich curry. A warming monsoon comfort food eaten with bhakri or rice.

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
- Turmeric Powder — 0.5 tsp (ground)
- salt (optional) (whole)
- Garlic — 1 tsp (ground)
- onion — 120 g (chopped)
- coriander powder — 1 tsp (ground)
- Horse Gram Flour — 1 cup (ground)
- Ginger — 1 tsp (ground)
Tempering
- oil — 2 tbsp (whole)
- Cumin Seeds — 1 tsp (whole)
Method
- Whisk the horse gram (kulith) flour into about 2 cups of water with turmeric and salt to a smooth lump-free slurry. Keep aside.
- Heat oil, splutter cumin, add crushed garlic and saute, then add chopped onion and green chilli; cook till soft.
- Lower the flame and pour in the kulith slurry while stirring continuously to avoid lumps.
- Simmer on low, stirring, for 8-10 minutes until it thickens and the raw smell goes. Adjust salt.
- Garnish with coriander and serve hot with bhakri or rice.
