
Petha Sabzi

Ingredients
Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Garlic — 1 tsp (ground)
- Ginger — 1 tsp (ground)
- Turmeric Powder — 0.5 tsp (ground)
- onion — 1 piece (chopped)
- Tomato — 100 g (chopped)
- salt (optional) (whole)
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
- Ash Gourd — 400 g (cubed)
Tempering
- oil — 2 tbsp (whole)
- Cumin Seeds — 1 tsp (whole)
Method
- Peel the ash gourd (petha), remove the seeds and cut into cubes.
- Heat oil in a kadhai and temper cumin seeds.
- Add chopped onion and saute until soft.
- Add ginger and garlic paste and saute until the raw smell goes.
- Add chopped tomato and cook until pulpy.
- Add turmeric and red chilli powder with salt; mix well.
- Add the ash gourd cubes and stir to coat.
- Cover and cook on medium flame for 12-15 minutes until the ash gourd turns soft and translucent.
- Uncover and cook off the excess moisture to a semi-dry sabzi.
- Garnish with coriander leaves and serve hot.
