Ingredients
Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Ghee — 100 g (whole)
- Avakaya (Mango Pickle) — 4 tbsp (whole)
- rice — 250 g (ground)
- salt (optional) (whole)
Method
- Cook the rice with enough water until soft and fully done, then spread it out on a plate to cool slightly so the grains stay separate.
- In a large bowl, add the cooked rice while still warm.
- Add the ghee to the warm rice and mix gently so every grain gets coated well.
- Add the avakaya mango pickle along with a little of its oil, and salt to taste as needed, keeping in mind the pickle is already salty.
- Mix everything together thoroughly with your hands or a spoon until the pickle masala is evenly spread through the rice, taking care not to mash the rice grains.
- Garnish with freshly chopped coriander leaves.
- Serve the Pelli Avakaya Rice at room temperature, a classic wedding-feast favourite, alongside papad or curd.
