Method

  1. Cook rice so the grains stay separate, spread out and cool. Soak a small ball of tamarind and extract pulp.
  2. Dry roast and grind the vangi bath spices (with the peanuts) into a fragrant masala powder.
  3. Heat oil, splutter mustard seeds, add curry leaves and a tempering, then add the cut brinjal.
  4. Add turmeric, tamarind pulp and the vangi bath powder; cook to a thick semi-dry brinjal masala.
  5. Gently fold in the cooked rice and salt until evenly coated. Garnish with coriander and serve warm.
