
Navaratri Sundal
Boiled chana dal tossed with fresh grated coconut and a light coconut-oil tempering -- the Navaratri prasad made with a different legume each day.

Ingredients
Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Chana Dal — 150 g
- salt (optional) (whole)
- Coconut — 60 g (chopped)
Tempering
- Coconut Oil — 2 tbsp (whole)
Method
- Soak the Chana Dal in water for at least 8 hours, or overnight.
- Boil the soaked Chana Dal in fresh water with a little salt until just tender; drain well.
- Grate the Coconut fresh and keep it loose rather than packed down.
- Heat the Coconut Oil in a kadhai on medium until it thins and shimmers.
- Add the boiled Chana Dal and half the grated Coconut; toss for a few seconds until warmed through.
- Off the heat, fold in the remaining raw grated Coconut and adjust the salt.
- Scatter Coriander Leaves over and serve at room temperature.
