  1. If using smoked tuna: shred into very fine flakes by hand. If using canned tuna: drain thoroughly and squeeze out excess water, then flake with a fork.
  2. Grate fresh coconut very finely. (If using desiccated coconut, soak briefly in 1 tbsp warm water to soften.)
  3. Very finely dice the red onion — pieces should be tiny (1-2 mm) for proper texture.
  4. Very finely chop green chillies (smaller than onion pieces — distribute heat evenly).
  5. In a large bowl combine flaked tuna, grated coconut, chopped onion, and green chillies. Use clean hands to MIX vigorously, gently massaging the mixture so the tuna and coconut absorb the onion juices and chilli heat. This step is essential to authentic Mas Huni.
  6. Squeeze in fresh lime juice. Add salt. Mix again with hands until well combined.
  7. Taste and adjust: more chilli if too mild, more lime if not tangy enough, more salt if needed.
  8. Serve immediately with hot fresh roshi (flatbread) and sweetened tea. Mas Huni is best eaten right after preparation — onion+coconut don't keep well.
