  1. Wash the green chillies and slit them lengthwise.
  2. Whisk gram flour with salt and water into a thick batter; spread the semolina out on a plate.
  3. Heat coconut oil in a deep kadhai on medium flame.
  4. Dip each chilli in the besan batter, then roll it in the semolina to coat evenly.
  5. Fry in batches until golden and extra crisp; drain on paper towels. Serve hot with chutney -- the semolina crust gives Mysore's bajji its signature crunch.
