
Mocha Ghonto
A festive vegetarian Bengali side — banana-flower florets cleaned tediously then cooked dry with cumin-paste, coconut and a touch of ginger-bay-leaf tempering. Eaten with rice and dal; iron-rich, lightly sweet, deeply traditional Bengali Brahmin cuisine.

Ingredients
- Turmeric — 2 g
- ginger paste — 12 g
- Coconut — 30 g (grated)
- Banana Flower — 400 g (cleaned-florets-only)
- Jaggery — 6 g
- green chillies — 10 g
- bay leaf — 1 g
- Cumin Seeds — 5 g
- Potato — 100 g (cubed-small)
- Ghee — 10 g
- cumin powder — 5 g
- salt — 5 g
- Mustard Oil — 30 g
Method
- Clean the banana flower — peel each bract, remove hard stamens and stigma; chop florets fine. Soak in turmeric water 10 min to prevent oxidation.
- Boil cleaned florets with salt and turmeric for 8 min till tender. Drain, squeeze out water.
- Heat 30 g mustard oil + 10 g ghee in kadai. Splutter cumin seeds and bay leaf. Add the cubed potato, fry till light golden.
- Add ginger paste, slit green chillies, cumin powder. Sauté 1 min.
- Add the boiled banana flower. Toss to coat. Cover, cook on low for 10 min, stirring occasionally — should be dry, not wet.
- Sprinkle 30 g grated coconut and 6 g jaggery. Toss well. Switch off. Serve with rice and dal.
