
Mizo Pork Fried Rice
Stir-fried rice tossed with pork belly and vegetables (carrot, cabbage, beans, capsicum) with garlic, ginger, onion, spring onion and soy sauce. Popular Aizawl restaurant dish, Indo-Chinese Mizo style.

Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
- Spring Onion (optional) (garnish) — 30 g (chopped)
Main
- onion — 40 g (chopped)
- Pork Belly — 250 g (chopped)
- Carrot — 50 g (chopped)
- green beans — 30 g (chopped)
- Soy Sauce — 18 g (whole)
- rice — 250 g (ground)
- Cabbage — 50 g (chopped)
- green bell pepper — 40 g (chopped)
- salt (optional) (whole)
Tempering
- Ginger — 8 g (chopped)
- Garlic — 10 g (chopped)
- oil — 2 tbsp (whole)
Method
- Use cooked, cooled rice for separate grains. Cut the pork into small bite-sized pieces.
- Heat oil in a kadhai or wok on high flame. Add cumin seeds and let them crackle.
- Add the pork and stir-fry on high heat until cooked through and lightly browned.
- Add the cooked rice and salt. Toss briskly on high flame until the rice is evenly coated and heated through.
- Garnish with fresh coriander leaves and serve hot.
