
Mathura Dhokla

Garnish
- Coriander Leaves (garnish) — 6 g (chopped)
Main
- Fruit Salt (Eno Style - Effervescent) — 3 g (whole)
- Ginger — 5 g (paste)
- Gram Flour — 100 g (ground)
- Curd — 100 g (whisked)
- green chillies — 6 g (paste)

- Turmeric Powder — 1 g (ground)
Tempering
- Curry Leaves — 2 g (whole)
- oil — 2 tbsp (whole)
- Lemon — 5 g (juice)
- Asafoetida — 0.5 g (whole)
- Mustard Seeds (Black) — 2 g (whole)
- White Sesame Seeds — 3 g (whole)
- sugar — 5 g (whole)
Method
- Whisk gram flour with curd, ginger-green chilli paste, turmeric powder and salt, adding water gradually to make a smooth, lump-free batter of pouring consistency. Rest for 10-15 minutes.
- Just before steaming, add the eno fruit salt and a splash of water; stir gently in one direction until the batter turns light and frothy.
- Pour the batter into a greased steaming plate and steam for 12-15 minutes, until a toothpick inserted comes out clean.
- Let it cool slightly, then cut into squares. Heat oil for the tempering and crackle mustard seeds, sesame seeds, curry leaves and asafoetida; add sugar dissolved in a little water and lemon juice.
- Pour the tempering evenly over the dhokla pieces, garnish with coriander leaves and serve.
