
Lai Xaak Bhaji
Mustard greens stir-fried with garlic and dried red chilli. Peppery winter greens from Tezpur.

Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Ginger — 0.5 tsp (grated)
- Garlic — 12 g (chopped)
- green chillies — 2 piece (chopped)
- Water — 0.5 cup (whole)
- Lai Shak (Northeast Fresh Mustard Greens) — 200 g (chopped)
- salt (optional) (whole)
Tempering
- dry red chillies — 4 g (whole)
- Mustard Oil — 2 tbsp (whole)
Method
- Wash and roughly chop the mustard greens (lai xaak); drain well.
- Heat mustard oil in a kadhai; temper with the dried red chillies until they darken slightly.
- Add minced garlic and grated ginger; saute until fragrant.
- Add the chopped mustard greens, chopped green chilli and a splash of water; stir-fry on medium flame until wilted and tender.
- Season with salt, garnish with coriander leaves and serve hot.
