
Doddak (Konkani Sooji-Urad Dal Pancakes)
Doddak is a traditional Konkani (Goan-Mangalorean) protein-rich pancake — a thick batter of soaked-and-ground white urad dal, semolina (sooji/rava), ginger and green chillies, fermented briefly, then ladled onto a hot tawa and shallow-fried with oil until golden on both sides. A staple breakfast/dinner of Konkani households served with coconut chutney or pickle.

- sooji — 2 cup (ground)

- green chillies — 1 piece (grated)
- Sunflower Oil — 2 tbsp (whole)
- Ginger — 1 piece (grated)
Tempering
- white urad dal — 1 cup (whole)
Method
- To begin making Doddak, wash and soak the split urad dal for 1 hour in enough water.
- Grind the soaked urad dal to a smooth fluffy batter in a mixer grinder, adding enough water as needed.
- Transfer this batter to a big mixing bowl, add the sooji (rava), grated ginger, and chopped green chilli, season with salt, and mix into a thick batter using a little water. Rest the batter for 15-20 minutes so the sooji absorbs water.
- Heat a griddle or tawa on medium heat and grease it lightly with sunflower oil.
- Pour a ladleful of the batter onto the tawa and spread it slightly into a thick pancake.
- Drizzle a little oil around the edges and cook on medium-low heat for 2-3 minutes until the bottom turns golden brown.
- Flip carefully and cook the other side for another 2-3 minutes until golden and cooked through.
- Repeat with the remaining batter and serve the Doddak hot with chutney or pickle.
