
Kodu Ki Roti

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Kodo Millet Flour — 250 g (ground)
- ajwain — 0.5 tsp (ground)
- Water — 1 cup (whole)
- salt (optional) (whole)
- Ghee — 2 tbsp (whole)
Tempering
Method
- Boil the water with ajwain and salt in a pan, then gradually add the kodo millet flour, stirring continuously to avoid lumps, until it forms a soft dough ball.
- Cool the dough for a few minutes, add a little oil and knead briefly until smooth. Millet dough has no gluten, so handle gently.
- Divide into portions. Pat or roll each into a roti, dusting with millet flour if it sticks.
- Cook on a hot tawa with ghee, pressing gently, until both sides have golden-brown spots.
- Garnish with fresh coriander leaves. Serve hot with curry, curd or chutney.
