
Kodo Millet Roti

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)

- ajwain — 0.5 tsp (ground)
- Kodo Millet Flour — 250 g (ground)
- Water — 1 cup (whole)
- Ghee — 2 tbsp (whole)
Tempering
Method
- In a bowl, take the kodo millet flour, ajwain and salt, and mix well.
- Boil the water and pour it hot into the flour mixture, stirring quickly with a spoon to avoid lumps.
- Once it cools a little, knead into a soft, smooth dough using your hands, adding a little more warm water if needed.
- Divide the dough into equal balls. Pat or roll each ball between two sheets of plastic or banana leaf into a thin round roti, as kodo millet dough is delicate.
- Heat a tava on medium flame and gently transfer the rolled roti onto it.
- Drizzle a little oil around the edges and cook until small bubbles appear, then flip carefully.
- Press gently with a spatula and cook both sides until golden brown spots appear and the roti is fully cooked.
- Smear the ghee on top while hot, garnish with chopped coriander leaves and serve immediately.
