- Jaggery — 100 g (whole)
- Tamarind — 100 g (whole)
Tempering
- oil — 2 tbsp (whole)
- Cumin Seeds — 1 tsp (whole)
Method
- Wash and prepare all ingredients for Karela Nu Shaak Gujarati. Chop vegetables, marinate protein if needed.
- Heat oil in a pan. Add cumin/mustard seeds for tempering.
- Add the main ingredient. Season with turmeric, salt, and spices.
- Stir fry on medium flame until cooked through and slightly crispy.
- Adjust salt and spices. Garnish with fresh coriander leaves. Serve hot.
