Ingredients
Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Kachri (Fresh Wild Desert Melon) — 100 g (chopped)
- salt (optional) (whole)
Tempering
- Mustard Oil — 2 tbsp (whole)
- Cumin Seeds — 1 tsp (whole)
Method
- Wash the fresh kachri (wild desert melon) well and cut into small cubes, discarding any hard seeds if too mature.
- Heat the mustard oil in a kadai till it smokes lightly, then lower the flame to let it cool a bit and reduce the raw smell.
- Add the cumin seeds to the hot oil and let them splutter for a few seconds.
- Add the chopped kachri to the tempering and mix well so every piece is coated with oil and cumin.
- Add salt, cover and cook on low-medium flame, stirring occasionally, until the kachri turns soft and slightly translucent, about 10 to 12 minutes.
- Uncover and stir-fry for another 2 minutes on slightly higher flame so any extra moisture dries up and the sabzi turns dry.
- Turn off the flame, garnish with chopped coriander leaves and serve hot with rice or roti.
