- Coriander Leaves (optional) (garnish) — 10 tbsp (chopped)
Main
- Mutton — 350 g (chopped)
- Turmeric Powder — 1 g (ground)
- Ginger — 12 g (chopped)
- Garlic — 12 g (chopped)
- salt (optional) (whole)
- garam masala powder — 2 g (ground)
- Lemon — 15 g (whole)
- Curd — 80 g (whole)
- Red Chilli Powder (Lal Mirch) — 3 g (ground)
Tempering
Method
- Cut the mutton into 1-inch cubes, wash and pat dry.
- Whisk curd with ginger, garlic, red chilli powder, turmeric, garam masala, lemon juice and salt. Add the mutton cubes and coat well.
- Cover and marinate in the refrigerator for at least 4 hours, overnight for best results.
- Thread the marinated mutton cubes onto skewers, leaving a little gap between pieces, and grill over hot charcoal or in a preheated tandoor/oven at 220 degrees C for 12-15 minutes, turning occasionally and basting with oil, until charred outside and cooked through.
- Rest for a minute, slide off the skewers, garnish with coriander leaves and serve hot with green chutney and lemon wedges.
