Method

  1. Boil water and let it cool slightly to hot (not scalding). Mix pearl millet flour, wheat flour and salt in a bowl.
  2. Add hot water gradually and knead into a soft, non-sticky dough. Cover and rest 10 minutes.
  3. Divide the dough into equal portions. Using wet palms, hand-pat each portion into a thick 5-6 inch disc.
  4. Heat a tawa on medium-high flame with a little oil. Cook the roti, flipping once bubbles appear, until both sides have golden-brown spots.
  5. Serve hot with a generous dollop of ghee and jaggery, garnished with coriander leaves.
