
Haryanvi Bajra Roti
Thick pearl millet flatbread hand-pressed and roasted on cowdung fire. Rohtak farmer staple with ghee and gur.

Ingredients
Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Wheat Flour (Atta) — 25 g (ground)
- salt (optional) — 5 g (whole)
- Pearl Millet — 250 g (ground)
- Ghee — 100 g (whole)
- Jaggery — 100 g (whole)
Tempering
Method
- Boil water and let it cool slightly to hot (not scalding). Mix pearl millet flour, wheat flour and salt in a bowl.
- Add hot water gradually and knead into a soft, non-sticky dough. Cover and rest 10 minutes.
- Divide the dough into equal portions. Using wet palms, hand-pat each portion into a thick 5-6 inch disc.
- Heat a tawa on medium-high flame with a little oil. Cook the roti, flipping once bubbles appear, until both sides have golden-brown spots.
- Serve hot with a generous dollop of ghee and jaggery, garnished with coriander leaves.
