
Hadoti Ki Dal
Hadoti region mixed dal with ghee tadka, dried red chilli, and asafoetida. Simple home-style protein-rich everyday dal from Kota-Bundi-Jhalawar belt.

Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- coriander powder — 1 tsp (ground)
- Ginger — 1 tsp (ground)
- onion — 2 piece (chopped)
- Toor Dal — 250 g (whole)
- Tomato — 2 piece (chopped)
- Garlic — 1 tsp (ground)
- Turmeric Powder — 0.5 tsp (ground)
- salt (optional) (whole)
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
Tempering
- Ghee — 3 tbsp (whole)
- Asafoetida — 0.25 tsp (whole)
- Cumin Seeds — 1 tsp (whole)
Method
- Wash the toor dal well and pressure cook it with turmeric powder, salt and enough water for 3 to 4 whistles, until soft and mushy. Mash lightly and keep aside.
- Peel and finely chop the onion, tomato, ginger and garlic while the dal is cooking.
- Heat the ghee in a pan and add the cumin seeds and hing. Let them crackle.
- Add the chopped ginger and garlic and saute for a few seconds till fragrant, then add the onion and cook till golden.
- Add the chopped tomato, coriander powder and red chilli powder, and cook till the tomato turns soft and the masala releases oil.
- Pour the cooked dal into this masala, adjust water to get a medium-thin consistency, and add salt to taste.
- Let the dal simmer on low flame for 8 to 10 minutes, stirring occasionally, so the Hadoti-style tempering flavours blend in well.
- Turn off the heat, garnish with chopped coriander leaves and serve hot with steamed rice or roti.
