
Goan Sao Joao Feni Cocktail

- sugar — 100 g (whole)
- Water — 2 cup (whole)
- Lemon — 7.5 g
- Cashew Apple — 100 g (chopped)
Tempering
- Coconut Oil — 2 tbsp (whole)
Method
- Rub a few drops of coconut oil onto your palms and onto the muddler or pestle you will use -- this keeps the sticky, tannin-rich cashew apple juice from clinging to your skin.
- Wash the cashew apple well and crush it firmly with the oiled muddler to release its juice, discarding the fibrous pulp.
- Strain the crushed cashew apple through a fine sieve or muslin cloth to collect a clear juice.
- In a jug, mix the strained cashew apple juice with the measured water.
- Add the sugar and squeeze in the Lemon, stirring well until the sugar dissolves completely.
- Add a small pinch of salt to balance the sweetness, if desired.
- Chill the mixture or serve over ice.
