
Egg Fry
Boiled egg halves tossed in a South Indian mustard-and-curry-leaf tempering with sauteed onion, folded through rice -- a light Telangana-style egg preparation.

Ingredients
Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- salt (optional) (whole)
- boiled eggs — 250 g (whole)
- rice — 100 g (ground)
- onion — 100 g (chopped)
Tempering
- Urad Dal — 1 tsp (whole)
- Curry Leaves — 8 piece (ground)
- Mustard Seeds (Black) — 1 tsp (whole)
- Coconut Oil — 2 tbsp (whole)
Method
- Heat the Coconut Oil in a pan, splutter the Mustard Seeds, then add the Urad Dal and Curry Leaves and fry 30 seconds.
- Add the chopped onion with salt and fry 4-5 minutes until soft and golden.
- Halve the boiled eggs and lay them cut side down in the pan.
- Fry 2-3 minutes without disturbing them so the cut faces turn golden and lightly crusted.
- Turn them over gently, spoon the onion tempering on top and cook 2 minutes more.
- Cook the rice separately until fluffy.
- Garnish with Coriander Leaves and serve the eggs hot with the rice.
