A hearty Karnataka one-pot rice dish where rice and toor dal simmer with carrot, peas, and potato in a tangy tamarind-spiced masala, finished with ghee.

Method

  1. Heat the Coconut Oil in a heavy-bottomed pot and add the Cumin Seeds, letting them splutter for 30 seconds.
  2. Add the Carrot, Potato, and green peas, and sauté for 3-4 minutes.
  3. Add the rice and Toor Dal, and stir for a minute to coat with the tempering.
  4. Add the Turmeric Powder, Red Chilli Powder, coriander powder, and salt, and mix well.
  5. Add water (about three times the volume of the rice and dal) and bring to a boil.
  6. Cover and cook on medium-low flame for 20-25 minutes, stirring occasionally, until the rice and dal turn soft and mushy.
  7. Soak the Tamarind in warm water for 10 minutes, extract the pulp, and stir it into the pot.
  8. Simmer for another 5 minutes so the tamarind flavour infuses through.
  9. Finish by stirring the Ghee through the top.
  10. Garnish with Coriander Leaves and serve hot.
