Authentic Sindhi-Hindu Patri Khichdi — rice and split green moong dal pressure-cooked with whole black peppercorns to a soft, porridge-like consistency. 'Patri' means soft in Sindhi. Traditional Sindhi comfort food, especially for an upset stomach or when light food is desired. Served with desi ghee, yogurt, fried potatoes (Aloo Tuk), pickle, and papad. Distinct from Bengali jol-bhora (less mushy) and Gujarati khichdi (which uses moong dal but firmer texture).

  1. Combine rice and split moong dal in a bowl. Rinse 2-3 times with water until water runs clearer. Soak in fresh water for 15-20 minutes, then drain.
  2. Heat ghee in pressure cooker on medium. Add black peppercorns and green cardamom (if using); sauté 30 seconds until aromatic.
  3. Add the drained rice-dal mixture; stir-fry briefly (1 minute) to coat with ghee.
  4. Pour in 5 cups (1.2 liters) of water (or vegetable stock). Add salt and turmeric powder. Stir well. Close pressure cooker lid.
  5. Pressure cook on medium heat for 6-7 whistles, then reduce to lowest flame and simmer 1-2 more minutes. Switch off.
  6. Once pressure releases naturally, open the cooker. Mash the khichdi with a wooden masher (potato masher) until creamy and porridge-like — this is the 'patri' (soft) signature.
  7. Adjust consistency: if too thick, add hot water and bring to a brief boil. Salt to taste.
  8. Serve hot in deep bowls with a generous drizzle of desi ghee on top, accompanied by Sindhi Aloo Tuk, plain yogurt, mango pickle, and crisp papad.
