
Bharli Mirchi
Maharashtrian-style stuffed green chillies (bharli mirchi). Large mild green chillies are slit and filled with a dry masala of roasted crushed peanuts, grated coconut, besan, turmeric and amchur, then shallow-cooked. Spicy with a tangy edge; eaten with varan-bhaat or roti.

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Turmeric Powder — 0.5 tsp (ground)
- amchur powder — 5 g (ground)
- salt (optional) (whole)
- Gram Flour — 40 g (ground)
- green chillies — 250 g (chopped)
- Coconut — 100 g (chopped)
- Peanuts — 100 g (whole)
Tempering
- oil — 2 tbsp (whole)
- Cumin Seeds — 1 tsp (whole)
Method
- Dry-roast the peanuts and coarsely crush them. Wash large mild green chillies, pat dry, and make a slit lengthwise (keep them whole).
- Lightly roast the besan until fragrant. Mix crushed peanuts, grated coconut, roasted besan, turmeric, amchur and salt into a dry stuffing.
- Stuff this masala firmly into the slit chillies.
- Heat oil in a pan, add cumin seeds; arrange the stuffed chillies and cook covered on low heat, turning occasionally.
- Cook until the chillies soften and the stuffing turns golden. Garnish with coriander and serve hot.
