Maharashtrian stuffed capsicum sabzi. Bell peppers stuffed with a spiced roasted gram flour (besan) mixture, then shallow-fried until tender and lightly charred. A dry side dish served with chapati or bhakri.

Tempering
Method
- Wash and prepare all ingredients for Bharli Shimla Mirchi. Chop vegetables, marinate protein if needed.
- Heat oil in a pan. Add cumin/mustard seeds for tempering.
- Add the main ingredient. Season with turmeric, salt, and spices.
- Stir fry on medium flame until cooked through and slightly crispy.
- Adjust salt and spices. Garnish with fresh coriander leaves. Serve hot.
