  1. Wash and thoroughly dry 250 g okra (bende kaayi), then cut into 1 cm rounds. Drying well keeps it from turning slimy.
  2. Heat the coconut oil in a kadai. Add the mustard seeds and let them splutter, then add the urad dal and curry leaves and fry until the dal turns golden.
  3. Add the chopped okra and salt. Stir-fry uncovered on medium flame, stirring occasionally, for 10-12 minutes until the okra is tender and no longer sticky.
  4. Sprinkle the gram flour (besan) over the okra and toss well. Cook another 3-4 minutes until the besan coats the okra, loses its raw smell and turns lightly crisp.
  5. Garnish with chopped coriander leaves and serve hot with rice and rasam, or as a side with chapati.
