
Bende Kaayi Palya
Okra dry fry with besan and spices. East Karnataka style uses minimal oil and roasts till crispy, eliminating the sliminess.

Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Gram Flour — 30 g (ground)
- bhindi — 250 g (chopped)
- salt (optional) (whole)
Tempering
- Curry Leaves — 8 piece (ground)
- Mustard Seeds (Black) — 1 tsp (whole)
- Coconut Oil — 2 tbsp (whole)
- Urad Dal — 1 tsp (whole)
Method
- Wash and thoroughly dry 250 g okra (bende kaayi), then cut into 1 cm rounds. Drying well keeps it from turning slimy.
- Heat the coconut oil in a kadai. Add the mustard seeds and let them splutter, then add the urad dal and curry leaves and fry until the dal turns golden.
- Add the chopped okra and salt. Stir-fry uncovered on medium flame, stirring occasionally, for 10-12 minutes until the okra is tender and no longer sticky.
- Sprinkle the gram flour (besan) over the okra and toss well. Cook another 3-4 minutes until the besan coats the okra, loses its raw smell and turns lightly crisp.
- Garnish with chopped coriander leaves and serve hot with rice and rasam, or as a side with chapati.
