  1. Peel and dice the ash gourd (kumura) into small cubes.
  2. Heat mustard oil in a kadhai; temper with cumin seeds until they crackle.
  3. Add chopped green chilli and grated ginger; saute briefly.
  4. Add the diced ash gourd along with a little water; cover and cook on medium flame until tender.
  5. Season with salt, stir-fry uncovered until the moisture dries and the gourd turns lightly golden.
  6. Garnish with coriander leaves and serve hot.
