
Assamese Kumura Bhaji

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)

- Ash Gourd — 300 g (chopped)
- green chillies — 2 piece (chopped)
- Ginger — 0.5 tsp (grated)
- Water — 0.5 cup (whole)
Tempering
- Mustard Oil — 2 tbsp (whole)
- Cumin Seeds — 1 tsp (whole)
Method
- Peel and dice the ash gourd (kumura) into small cubes.
- Heat mustard oil in a kadhai; temper with cumin seeds until they crackle.
- Add chopped green chilli and grated ginger; saute briefly.
- Add the diced ash gourd along with a little water; cover and cook on medium flame until tender.
- Season with salt, stir-fry uncovered until the moisture dries and the gourd turns lightly golden.
- Garnish with coriander leaves and serve hot.
