  1. Clean and finely chop the colocasia (kosu) leaves, discarding the tough stems.
  2. Heat mustard oil in a kadhai; temper with cumin seeds until they crackle.
  3. Add chopped green chilli and grated ginger; saute briefly.
  4. Add the chopped colocasia leaves with a little water; cover and cook thoroughly on medium flame until fully tender (undercooked leaves can irritate the throat).
  5. Season with salt, stir-fry uncovered until the moisture dries up, garnish with coriander leaves and serve hot.
