  1. Clean and trim the dhekia xaak (fiddlehead fern) tips, wash thoroughly and chop roughly.
  2. Heat mustard oil in a kadhai till it smokes lightly; let it cool slightly.
  3. Crush and add the garlic; saute a few seconds till aromatic, then add ginger and slit green chillies.
  4. Add the chopped fiddlehead fern and a splash of water. Season with salt.
  5. Cover and cook on low-medium heat for 8-10 minutes, stirring occasionally, until the fern is tender.
  6. Uncover and stir-fry briefly to dry out excess moisture. Garnish with coriander leaves and serve hot.
