
Aloo Matar Pudina Tikki
Baked potato and sweet potato tikki mixed with steamed green peas, mint (pudina) green chutney, ginger and green chillies, then oven-baked until golden. A lighter, non-fried take on classic aloo tikki.

Ingredients
- Sweet Potato — 2 piece (chopped)
- kosher salt (optional) (whole)
- Green Chutney (Mint) — 3 tbsp (whole)
- Ginger — 1 piece (chopped)
- oil (optional) (whole)
- green chillies — 2 piece (chopped)
- onion — 1 piece (chopped)
- Potato — 3 piece (chopped)
- corn flour — 3 tbsp (ground)
- green peas — 150 g (chopped)
Method
- Boil and mash the potatoes and sweet potato together until smooth.
- Add the steamed green peas, grated ginger, chopped green chillies, onion, mint (pudina) green chutney, corn flour and salt. Mix well, lightly mashing the peas as you go.
- Divide the mixture into equal portions and shape into small, thick tikkis.
- Preheat the oven to 200°C. Arrange the tikkis on a greased baking tray.
- Bake for 15 minutes, turning once, until golden and firm on the outside.
- Serve the Aloo Matar Pudina Tikki hot with mint and tamarind chutney, alongside a cup of ginger chai.
