Achari Paratha Roll

Achari Paratha Roll is a flavorful North Indian fusion wrap. A whole wheat paratha is rolled with achari (pickle) masala (fenugreek, fennel, mustard, asafoetida), onion, green chilli, and vegetable filling, then toasted on a tawa. Served hot with chai or coffee and green chutney as tiffin or breakfast.

  1. Knead the wheat flour with salt and enough water into a soft, smooth dough. Cover and rest for 15 minutes.
  2. Boil the potatoes and green peas until soft. Peel the potatoes and mash both together in a bowl.
  3. Dry roast the mustard seeds on a hot pan for a few seconds until they crackle, then lightly crush them.
  4. Add the crushed mustard seeds, achari masala, red chilli powder, turmeric powder, garam masala, asafoetida and salt to the potato-pea mash and mix into a well-spiced filling.
  5. Divide the dough into equal balls and roll each into a thin paratha.
  6. Cook each paratha on a hot tawa on both sides until golden brown spots appear, pressing gently so it cooks through.
  7. Spread a portion of the achari potato-pea filling along the centre of each hot paratha and roll it up tightly into a roll.
  8. Serve the Achari Paratha Rolls warm, wrapped in paper for a tiffin or on-the-go snack.
