
Winter Gur Paratha
Jaggery-stuffed paratha with ghee for winter energy. CG cold morning breakfast.

Ingredients
- Jaggery — 100 g (whole)
- Wheat Flour (Atta) — 250 g (ground)
- Ghee — 100 g (whole)
- salt (optional) (whole)
Method
- In a large bowl, mix the wheat flour with a pinch of salt and a tablespoon of the ghee, rubbing it in with your fingers.
- Grate or finely chop the jaggery and add it to the flour, then add a little warm water gradually and knead into a soft, smooth dough. Cover and rest for 10 minutes.
- Divide the dough into equal portions and roll each one out into a paratha of medium thickness, dusting with a little flour if needed.
- Heat a tawa on medium flame and place the rolled paratha on it.
- Cook for a minute, then flip and spread a little ghee on the cooked side. Flip again and spread ghee on the other side too.
- Press gently with a spatula and cook both sides on medium flame, flipping once or twice more, until golden-brown crisp spots appear all over, about 4-5 minutes total.
- Repeat with the remaining dough portions, stacking the cooked parathas on a plate.
- Serve the gur paratha hot with a dollop of ghee on top.
