Brahmin-Style Vegetable Kurma is a South Indian coconut-based mixed vegetable curry where potatoes, carrot, and green beans are simmered in a freshly ground coconut, gram dal, tamarind, ginger, and green chilli masala paste. Tempered with mustard seeds, kalonji, cinnamon, and cumin in oil, without onion-garlic. Lightly tangy-sweet-spicy, best served with poori, dosa, idli, or steamed rice.

  1. Wash and chop the potatoes, carrot and green beans into small cubes and keep ready
  2. Grind the fresh coconut, ginger, gram dal, green chilli and kala jeera to a smooth paste with a little water, and soak the tamarind to extract its pulp
  3. Heat sunflower oil in a pressure cooker, add mustard seeds and cumin seeds and let them splutter, then drop in the cinnamon stick
  4. Add the chopped potatoes, carrot and green beans with turmeric powder and salt and saute for two minutes
  5. Pour in water and pressure cook for one whistle until the vegetables are half done
  6. Open the cooker, stir in the ground coconut paste and tamarind pulp and simmer a few minutes till the raw smell goes and the kurma thickens
  7. Garnish with chopped coriander leaves and serve hot
