Teej-special Ghevar — a crisp honeycomb-textured disc of maida-and-ghee batter streaked into hot ghee, then soaked in sugar syrup. A festive Bihar/North-Indian sweet.

- Ghee — 100 g (whole)
- All-purpose Flour — 120 g (ground)
- sugar — 0.5 cup (whole)
- Milk — 60 g (whole)
Method
- Rub chilled ghee into a little iced water until creamy, then whisk in the maida and milk with more iced water to a thin, lump-free, pouring batter.
- Heat ghee in a tall, narrow pot until very hot. Pour a thin stream of cold batter into the centre; it bubbles up. Repeat, letting each layer set, to build a honeycomb disc.
- Once golden and set, lift the ghevar out with a skewer through the centre and drain.
- Make a one-string sugar syrup, spoon it evenly over the ghevar, and let it soak in.
- Garnish with cardamom and chopped nuts; serve.
