Method

  1. Rub chilled ghee into a little iced water until creamy, then whisk in the maida and milk with more iced water to a thin, lump-free, pouring batter.
  2. Heat ghee in a tall, narrow pot until very hot. Pour a thin stream of cold batter into the centre; it bubbles up. Repeat, letting each layer set, to build a honeycomb disc.
  3. Once golden and set, lift the ghevar out with a skewer through the centre and drain.
  4. Make a one-string sugar syrup, spoon it evenly over the ghevar, and let it soak in.
  5. Garnish with cardamom and chopped nuts; serve.
