- banana — 100 g (chopped)
- Atta (Chakki Fresh Whole Wheat) — 200 g (whole)
- Jaggery — 100 g (whole)
- salt (optional) (whole)
- Fennel Seeds — 5 g (whole)
- Ghee — 30 g (whole)
Method
- Mash the banana smooth in a large bowl.
- Dissolve the jaggery in a splash of water over low heat to make a syrup, then cool slightly.
- Whisk the Atta and a pinch of salt into the mashed banana, adding the jaggery syrup gradually to form a thick, pourable batter. Rest 10 minutes.
- Stir the Fennel Seeds into the batter.
- Heat the Ghee in a shallow pan for deep-frying over medium flame.
- Ladle small portions of the batter into the hot Ghee and fry, turning once, until puffed and golden-brown on both sides, 3-4 minutes each side.
- Drain on paper and repeat with the remaining batter.
- Crush the Cardamom lightly and scatter it over the hot pua, then serve warm.
