Method

  1. Wash the rice and cook it until soft and slightly mushy, then mash it lightly while still warm.
  2. Add the milk to the warm rice and mix well, letting it cool down to room temperature.
  3. Once cooled, add the curd and salt, mixing thoroughly to get a smooth, semi-dry consistency.
  4. Heat coconut oil in a small pan for tempering, and add the mustard seeds, letting them splutter.
  5. Add the urad dal and saute until it turns golden, then add the curry leaves and asafoetida, letting them crackle for a few seconds.
  6. Pour the hot tempering over the curd rice and mix gently so the flavours spread evenly through the rice.
  7. Garnish with chopped coriander leaves and serve chilled or at room temperature.
